½ red cabbage
1 bunch of spring onions
1 red cayenne chilli
1 cup of medium grain rice
Stock cubes
Olive oil.
Cook the medium grain rice in 1 ½ cups of stock of your choice. Chop and sauté the spring onions and the chilli (adjust chilli amount to personal preference) in a frying pan using a splash of olive oil. Chop and throw in the red cabbage, sautéing till soft. Once the rice is cooked mix that through with the cabbage and you’ve got a lovely little side dish! If you’d like, turn it into a meaty main and cook 4-6 good quality sausages, chop and mix through. A simple and delicious winter warmer to give a gorgeous splash of colour to your plate!
