Cambray Cheese was borne from Jane’s passion for cheesemaking and Bruce’s experience with sheep farming, with the health benefits of sheep milk being the deciding factor. Today, Cambray is a true family business, with son Tom and his wife Maddie all busy on the farm and in the factory, whilst other daughter Nerralie mans the market stall.
Sheep milk has superior qualities to both goats and cows milk, being richer in vitamins A, B, D and E and with over 100% more calcium than cow’s milk. There is evidence that the lactose in sheep milk is more readily tolerated that that in cow’s milk, allowing many lactose-intolerant people to enjoy sheep milk products.
All Cambray sheep cheeses carries the official “Farmhouse” status in that every stage of manufacture happens entirely on the farm; only milk from a specially selected flock is used to produce the range of artisan handmade sheep cheeses. Cambray sheep graze on lush pastures enclosed by native bushland and drink from natural springs, ensuring a pesticide-free environment of exceptional purity.”
